Papaya Crepes

img Procedure:
Crepe dough procedure: Warm the milk and mix with butter. Whiz the egg, add flour, salt and sugar and mix with milk. Mix well and strain; finally keep the dough covered and refrigerated for 30 minutes.

Crepe filling Procedure: Peel the papaya and cut into small dice then sauté in butter thoroughly put in the saffron and orange zest, remove from heat and set aside in a bowl.

Crepe preparation process: Heat a large frying pan or a griddle and lightly smear it with butter. Add a scoop of crepe dough, let it cook and then flip when the edges turn golden brown. Keep the dish covered.

Final presentation of the crepe: At serving time, fill the crepes with papaya filling, roll up the crepe.

  • 1 Papaya
  • 1 tablespoon of sugar
  • 60g of flour
  • 1 Egg
  • 150ml of milk
  • Butter
  • Orange zest
  • Some saffron
  • A pinch of salt
